I do not think PSOC is suitable for general EMS, you would probably do better with something like AVR and ARM just because of the processing power, large user community, and cheap dev tools. Here's a reference design that could likely be modified for a knock sensor

With a couple adjustments, it could be changed to detect the signature of engine knock instead of glass a glass break signature.
