I can help you with ordering a Jaguar PCB when the time comes, but like Fred says you need to figure out your crankshaft and camshaft sensors first.
Your project sounds a lot like my 1932 Ford project (The Deuce), I'm using a GM 3100 V6 front wheel drive engine mated with a rear wheel drive GM 700R4 transmission.
